Quinoa for the soul

Enjoy this delicious quinoa as a healthy side dish or as a light salad
Ingredients needed:
- Whole grain quinoa (preferably organic)
- 1 medium sized tomato
- 1/2 a ripe avocado
- 1/3 long cucumber
- Olive oil
- Apple cider vinegar
- Oregano
- Parsley
How to prepare:
- cook quinoa and add to bowl
- dice tomato,avocado and cucumber and add to quinoa
- add oregano and parsley to taste
- add 1 to 2 tbsp olive oil
- add about 1-2 teaspoon apple cider vinegar
